Spotted a lot of damson on my way back from finding the girolles yesterday. Seemed fitting to try and make wild fruit take on a mango chutney. Other recipes are available and this was based on what I have hanging around and was great with the Girolle bhaji (video & recipe coming soon).

The fire cider vinegar fermented blackberries in this video are epic and I’ll make a video of that before the week is out but good Apple Cider Vinegar like @willysacv can be used with some blackberries freshly picked blended through

INGREDIENTS

2 handful of damsons – de-seeded
1/2 golden onion – diced
1 large carrot – diced
200ml fermented blackberry fire cider vinegar
2 chillies
5 cloves garlic – chopped
Thumb of ginger – peeled and chopped
1 tsp cumin
1 tsp onion seed (wild substitutes like Jack by the hedge seeds are incredible but didn’t have at the time)
1/2 tsp salt
1/2 tsp pepper
200g sugar

PROCESS

Cook down and soften the onions, carrots & damsons after which put in the vinegar+fruit and allow to reduce. Then in another pan fry the chilli, garlic, onion seeds and cumin and put into the pot with the other ingredients and add the sugar, salt and pepper. Allow to reduce till thick and sticky. It will be ready when you run a spoon through the mixture to the bottom of the pan and you can see the bottom clearly for a couple of second as it rolls back together. Put it in a jar and should store nicely.
