*IDs in previous videos I’ve been experimenting wild ingredients for some time now, preserving them, and making the most of their flavour when it peaks seasonally.

Here’s a little combo I started 12 months ago with my 3 cornered leek & Carlin pea miso. Then, at the start of this winter, I made smoked and confit mushrooms. I also collected my first Scarlet elf cup, extra winter oyster mushrooms, and wild garlic on this day to create this truly wild bite. I crisped up the confit mushrooms after salting and cooking the fresh oyster, then placed a basket over the top to steam the scarlet elf cups and the wild garlic just a little. I mixed the Carlin pea miso with a touch of mayo and placed it in the steamed scarlet elf cup. I topped it with crispy smoked confit mushrooms and fresh wild garlic. One bite was well worth the 12 months! Calling on preserved wild flavours that have been made at their peak means a pantry full of excellent flavours to draw on. It was delicious, but I probably won’t get to try the combo again until next year.
