This time of year I focus on the veg found in estuaries and sandy banks near the sea. While I love the flavour of fresh, wild food and the thrill of the unknown, the worst part is the fear of not making it out. This story comes from very early in my foraging career where for a good 15 minutes I thought it was over.

Armed with the wrong attire and a cheap pair of Dunlop boots, I set out to collect samphire and other tasty salty greens. These areas often salty & sandy estuaries are a beautiful spot but stability of the earth underfoot is questionable from step to step. As I put one foot down, it sank. Lifting it out, the boot came off, so I put the other foot down and it sank too. Then I started sinking and for a period I thought that it was all over.

Eventually, I managed to flop out, stuck like a seal finding a rock to sunbathe on.

I’ll never forget it and I’ll always be prepared.
