There’s a very short window for collecting these unopened flowers, known as scapes. You must first identify them correctly and then gather them from abundant wild garlic areas.
Simply salt them overnight or longer. The next day, rinse off the salt. Rinsing might seem counterintuitive but it’s crucial. The salt has already done its work by collapsing the air pockets in the vegetable flesh, resulting in a denser, less spongy texture.
This process improves the texture as excess water evaporates and removes some compounds, yielding a better, more intense flavour.
I love to pickle them after this stage and use them in all my dishes.
