I decided to head out the week before the solstice to pack a jar of what I could find and let it ferment with a little of my noble fir molasses as the sugar element.
The wild yeast on everything I picked welcomed the sugar from the noble fir molasses and in turn all the flavourful elements of each ingredient intermingling.
I gather the last of the elderflower, dog roast petals, pineapple weed and used some blackberry leaves for layers and a bit of tannins. This is a bit of fun really on how easy it is to make tasty drinks and get some natural probiotics in the process. Obviously the yeast creates alcohol and also the alcohol can be easily oxidised into a vinegar. All of which I enjoy so catching it at it best is the priority here. The summer solstice seemed like the right day.
It was lovely and a very tasty & enjoyable end of spring hedgerow wild soda.
