I recorded this back in August as part of an event making dishes from locally grown, gathered and many other ingredients from the surrounding area for @ryeharvest - so apologies for not making this as timely as normal. It was a lot of fun.

Also need to recommend seeing the fantastic work over at @handsofhopeuk in Hawkhurst that’s supporting communities throughout Rother, Hastings and West Kent. A lot of good is done here with special events, wonderful walled Edwardian kitchen garden and great work in the community through growing, cooking and nature based activities. Surrounded by 22 acres of AONB (Area of Outstanding Natural Beauty).

he sunflower seed tahini was a labour of love removing the seeds and then soaking them over night before roasting them and blending with water, oil and some salt. Given the abundance of great ingredients Isobel and I chatted a lot and I decided to make a ganoush for the event and also a few extra bits using the wonderful items grown. So many possibilities from one spot. 

The sunflower seed tahini was used with the burnt aubergines and courgettes with a bit of lemon balm and more oil. A glorious example of what’s possible. I didn’t capture the whole process properly but will do that next year. I was busy and the garden blew my mind.
