”Wild garlic is in flower and going into seed probably well into seed in some places. This is process I normally apply to 3 cornered leek or few flowered leek (the best because the bulbils on these are perfectly spherical). But thought I would try it with the wild garlic bulbils.

By collecting the wild garlicky stems and seed heads at the moment you get the lovely little pops of the wild garlicky stems in the developing seeds and an incredibly juicy stem.
This method makes use of both by preserving the bulbils by salting overnight, washing off and then keeping in vinegar for another day. During this process I have used the stems to make a green oil and after straining out the vinegar (use for another dish as it’s incredible). Generally I like to thicken it a little but it seemed to hold pretty well so I will use this like green flying fish roe (tobiko)
